Instructions
Step 1. Season the steak liberally with salt and pepper, and optionally with smoked sea salt or other spices.
Step 2. Preheat the oven or grill to a low temperature, around 225-250°F, and place the steak on a baking sheet or wire rack over indirect heat.
Step 3. Cook the steak until it reaches an internal temperature of 110-125°F, depending on your preference for doneness. Use a thermometer to check the temperature.
Step 4. Sear the steak on a hot grill, in a cast-iron pan, or under a broiler for a few minutes per side, until a nice crust develops.
Step 5. Place cowboy butter on the steak and rest the steak on a foil-tented plate for 5-10 minutes before slicing and serving.
Instructions
Step 1. Prepare the Steaks: Remove the steaks from the refrigerator and allow them to come to room temperature (about 30 minutes before cooking). Pat them dry with paper towels to remove excess moisture.
Step 2. Season the Steaks: In a small bowl, mix olive oil or melted butter, garlic, rosemary, and thyme. Rub the steaks with this mixture on both sides. Generously season both sides of the steak with salt and pepper.
Step 3. Heat up Cast Iron Skillet on medium-high until very hot.
Step 4. Cook the Steaks: Pan-searing: Add a tablespoon of oil to the hot skillet. Place the steaks in the skillet and cook for about 4 minutes on each side for medium-rare. Add the butter to the pan and baste the steak by spooning the melted butter over it as it cooks.
Step 5. Use meat thermometer to check temp: Rare: 120-125°F | Medium-rare: 130-135°F | Medium: 140-145°F | Well-done: 160°F+
Step 6. Rest the Steaks: Remove the steaks from the heat & let them rest for 5-10 minutes. This allows the juices to redistribute, making the steak more tender and flavorful.
Step 7. Serve: Slice the steak and serve with a lemon wedge (optional) to enhance the flavor, alongside your favorite sides like roasted vegetables or mashed potatoes.

Step 1. Combine all ingredients until well mixed.
Step 2. Form into a log, wrap with plastic wrap, and refrigerate until firm.
Step 3. Slice and serve on steaks as desired.
